THE SECRET IS OUT!
Sharing one my of all time favorite FAMILY recipes that has been passed down for generations
When I think about memorable moments throughout my childhood, my Mom's Strascinati is one that often comes to mind. One of the things I remember the most was how excited my Dad would be! It was his absolute favorite meal that my Mom made and it always set the tone for a wonderful family dinner that allowed us to talk, share about our day and reconnect. It's just one of those meals that bring a lot of comfort and you're always guaranteed to leave the table with a full belly! This is the first time I've made Strascinati's for my children and I can confidently say, it was LOVE at first TASTE! I hope that when my girls are grown, they look back as fondly on our family dinners, as I do on mine. I pray the tastes bring back memories and instill the same feelings that I carry with me from my childhood. It's truly amazing what food can do and how it brings people together. Perhaps, that's why I love cooking so much! So here it is, the infamous "Innocenzi Strascinati." I hope you love it as much as we do!
Ingredients:
1 lb penne pasta
4 slabs thick cut bacon
2 Italian sausage links (casing removed)
2 TBSP garlic
1 shallot, minced
2 egg yolks
1/2 C heavy cream
3/4 C grated Parmesan cheese
1 tsp ground pepper
Directions:
1) In a small bowl, whisk together egg yolks, cream and grated Parmesan cheese and set to the side. (You want this mixture to come to room temp, so make sure you do this step first!)
2) Start boiling your salted water for the Penne. Cook according to package instructions
3) Add chopped bacon and sausage to a large skillet and begin browning.
4) While sausage and bacon are browning, chop shallot and garlic. Add to the skillet and saute additional 2-3 minutes.
5) Strain pasta, return to pot and add in sausage mixture. Stir well to combine then turn OFF heat.
6) Add in the cream/cheese/egg mixture and stir well. The hot pasta will cook the eggs through. Stir in black pepper and top with additional parmesan cheese. Serve hot & enjoy!
